Grilled California Sardines with Italian Dipping Sauce:

Serves 4

• 1 pound fresh California Sardines,
   cleaned with heads removed
   cumin, salt and pepper to taste

• 1 recipe Italian dipping sauce

  Rinse sardines under cold running water and pat dry with clean paper towel. Place sardines on a very hot grill without oil. Sprinkle with cumin, salt and pepper. Cook about 3-4 minutes. Turn sardines over and sprinkle with more cumin, salt and pepper. Cook another 3-4 minutes. Remove sardines from the grill, drain briefly on paper towel if needed and serve with Italian dipping sauce.

* Select sardines that range from 6 to 8 inches in length

Italian Dipping Sauce

• 1/2 cup red wine vinegar
• 3 cloves garlic, chopped
• 2 tablespoons chopped Italian parsley
• 1 tablespoon chopped green onion
• 10 Kalamata olives, chopped

Combine ingredients in a small bowl, mix and refrigerate until ready to serve.
